Favorite Mada Recipes

Bonbon Coco:


Ingredients:
-Shredded coconut
-Bowl of sugar
-Water

Preparation:
1. Prepare a pot of boiling water
2. Take grated coconut and stick it together into the pancake-like forms
3. Dip the coconut pancakes into the bowl of sugar
4. Place the coconut pancakes into boiling water until they are well-cooked
5. Enjoy!

Mokary (Malagasy Doughnuts):


Ingredients:
-2 cups of flour
-1/2 cup of sugar
-1 packet of dry yeast
-2 teaspoons of baking soda
-Water
-Vegetable Oil

Preparation:

1. Mix all the dry ingredients together
2. Add water and until the dough is sticky, but make sure that it is not too watery
3. Let the dough sit for 30 minutes.
4. Add a generous amount of oil (yay to fried food!) to a deep frying pan and heat
5.  Drop ball-shaped pieces of dough into the hot oil until they are cooked all the way though
6. Enjoy!

Rano ampagno (rice water):


Rice water is often the beverage of choice during breakfast, lunch and dinner in Madagascar.  Boil and cook rice as usual.  When rice is done, spoon out the majority of rice into a separate bowl.  Keep a 3/4 inch layer of rice at the bottom of the pot and add water.  Boil the water until the rice is burnt and the color of the water is brown.  Serve warm (that's the Sakalava way of doing it)!

Bread with Avocado Butter:


Take one avocado and mash it up into a paste-like consistency.  Add a little bit of sugar and spread on bread!  It is surprisingly delicious!
